Description
Authentic, Fermented West African Cassava Fufu Flour
Ad-Ola Foods Cassava Fufu (traditionally known as Akpu, Santana, or Water Fufu) is a premium, high-quality flour designed to make the traditional West African swallow preparation simple and convenient. Made from fermented cassava roots, this fufu captures the authentic, slightly sour, and tangy aroma that fufu lovers cherish. Ad-Ola Foods processed this starch into a fine, dry flour, eliminating the tedious, labor-intensive process of peeling, soaking, grating, and pounding fresh cassava, while preserving its traditional taste and high elasticity.
The Ultimate Companion for Traditional Soups
In West African cuisine, cassava fufu is a celebrated specialty, serving as the heavy, stretchy swallow used to scoop up rich, oil-based soups:
-
Egusi Soup (Melon Seed Soup): The smooth, doughy fufu pairs beautifully with the rich, textured seeds and green vegetables of Egusi soup.
-
Okra & Ogbono Soups: The excellent elasticity of cassava fufu complements the draw (slime) of Okra and Ogbono, making it easy to swallow.
-
Bitter Leaf Soup (Ofe Onugbu): Balances the deep, earthy, and slightly bitter flavors of traditional herbal soups.
-
Light Soups: Perfect for dipping into spicy goat light soup or fish pepper soup on a cold day.

Simple Cooking Directions
Preparing smooth, lump-free cassava fufu from flour is simple:
-
Mix: In a clean cooking pot, mix 1 cup of Ad-Ola Cassava Fufu flour with 1 cup of cold water. Stir thoroughly with a wooden turning stick until you have a smooth, runny, and lump-free paste. (Adjust water slightly depending on your preferred firmness).
-
Cook: Place the pot on medium heat and stir continuously.
-
Turn: As the mixture heats, it will begin to thicken and turn translucent gray/off-white. Keep turning and kneading the dough firmly against the sides of the pot to prevent lumps.
-
Steam: Pour a tiny splash of water around the edges of the dough, cover with a lid, and let it steam on low heat for 2 to 3 minutes to ensure it is thoroughly cooked.
-
Finish: Turn the dough one final time until it is smooth, glossy, and uniform. Wrap in cling film or serve warm alongside your favorite soup.
